Spanish Omelette

I read this recipe on internet and found it too tempting so tried it immediately. I know I have been lazy in posting my recipes, but I am getting into the groove now….I have made a few changes in the original recipe with whatever I had at home and also there are some herbs which we don’t get here in India easily. The outcome was great. Here’s the recipe.



Ingredients
4 to 5 medium size potatoes, thinly sliced
3 onions medium size, thinly sliced
1 Capsicum, thinly sliced (You can use red and yellow bell pepper too)
Mixed herbs
6 Egg whites and 3 yellows
6 to 8 pods of Garlic, thinly sliced
2 tbspn. Fresh cream
Tomato Ketchup (optional, personally I like the sweet and sour taste)
Salt to taste
Chilly flakes
2 tbspn. Oil
Cheese as per your taste



Method
Heat 1 tbspn. Oil in a non stick frying pan. Add garlic, potatoes, onions, capsicum, also sprinkle some salt and mixed herbs and stir. Keep a lid and let it cook till tender. Now switch off the flame and remove the cooked veggies in a bowl for cooling.
Beat eggs and add fresh whipped cream. Mix well. Now mix the veggies to the beaten eggs and cream. Add tomato ketchup, chilly flakes and mix well, add salt to taste. Heat remaining oil in the same frying pan, spread it evenly. Add the mixture to the hot pan. Maintain a low flame. Spread some cheese on top of the mixture and cover it with a lid. Let it cook for 15 to 20 mins on a low flame.


Cut slices and serve hot!!
